Zucchini Casserole

Ingredients
- 2 1/2 lbs zucchini
- 8 oz sour cream
- 2 ea medium carrots, grated
- 1 ea medium onion
- 2 C cheddar cheese, grated
- 2 C mozzarella cheese, grated
- 1 stick butter
- 2 boxes Stove Top Stuffing Mix (w/o the spices)
Instructions
- Cook the zucchini in lightly salted water, drain, then add the sour cream, carrots, and onion.
- Melt the butter. Add it to the cheddar and mozzarella cheeses and 1 1/2 box of stuffing in a separate bowl.
- Grease a casserole dish, layer in 1/2 the zucchini mixture, then 1/2 the cheese mixture, then repeat. Sprinkle the remaining 1/2 box of stuffing crumbs on top.
- Bake at 325 for 45 minutes.
- Plate and serve.
